Chia's Cinnamon Rolls

Today, I will share my recipe for cinnamon rolls. It was my first time attempting this out, without glimpsing at any recipe online and that's why I reward myself for bringing in this pastry and proud to let out that it is my version, although this may be a relatively traditional dessert I suppose, it is still not exceptionally traditional for normal baking at home. This dessert is ideal for small festivities, pot luck meetups, or lounging at home together with a cup of tea or coffee. This was our office staff's favourite dessert that I made when my husband got it to work.

Ingredients: 

Dough

  1. 1 cup warm milk
  1. 1 stick/ 1/2 cup melted unsalted butter
  1. 2 1/4 tsp (1 packet) active dry yeast
  1. 1/2 cup granulated sugar
  1. 1 egg
  1. 1 tsp baking powder
  1. 1/2 tsp salt
  1. 4 cups of all-purpose flour (plus 2 tbsp if necessary)
Cinnamon Filling
  1. 1/4 cup softened butter
  1. 5-6 tbsp brown sugar
  1. 6-7 tbsp cinnamon powder
Cream Cheese Icing
  1. 1/2 cup cream cheese
  1. 1/4 cup whipping cream
  1. 5 tbsp powdered sugar

Method:

Dough
  • Mix the melted butter, warm milk, sugar and active dry yeast and let it proof for 5-10 mins. (this is always the first method in proofing yeast since sugar is food for the yeast and salt kills it)
  • After proofing the milk mixture, combine all the dry ingredients ALL PURPOSE FLOUR, SALT & BAKING POWDER into a bowl and stir with a wooden spoon, or blend it in a stand mixer fitted with a hook attachment until evenly combined. If mixing by hand, turn the dough out onto a work surface and knead until smooth for about 5 minutes, or if it's in a mixer, knead for about 3 minutes.
  • Transfer the dough to an oiled bowl and cover it with plastic wrap and let it rise until doubled in size for about 2 hours.
Filling
  • Mix brown sugar, and cinnamon powder together with the butter to have an evenly spread to your cinnamon rolls.
Risen Dough

Turn the risen dough onto a lightly floured surface and roll it out into a rectangle about 18 x 12 inches (46-x-30 cm). Brush the entire surface of the dough with mixed melted butter, brown sugar & cinnamon. Roll up the dough from the longer side and then cut the roll into 12 pieces using floss. Place these into a greased 9-x-13-inch (3 L) pan, evenly spaced, cover with plastic wrap or tea towel and let rise for an hour.

Preheat the oven to 350 ºF (180 ºC). Uncover the risen sticky buns and bake them for 40-45 minutes, until they are a rich golden brown. It is recommended to cool the sticky buns for 15 minutes in the pan before inverting them to serve.

Take Note: Every oven is different. Make sure that you keep checking your rolls in the oven even there's an approximate time to bake them.

The buns are best served the day they are baked.

*For an added touch, cooled cinnamon buns can be smeared with an easy cream cheese frosting.

Cream Cheese Frosting

combine cream cheese, whipping cream and powdered sugar. Adjust the amount of powdered sugar according to your taste and desired texture.
