Lemon Crinkle Cookies

I have been making crinkle cookies for some time now. And I chose to look for other flavours that are not typically used but simple to discover in the kitchen. So I chose to embark on lemon crinkle cookies. Here's the recipe for my Lemon Crinkle Cookies.


INGREDIENTS

1 cup sugar/ 200grams

10 tablespoons butter/ 142 grams

4 tablespoons lemon juice

2 teaspoons lemon zest (lemon extract optional)

1 teaspoon vanilla extract

2 large eggs

2 cups flour/ 250 grams

2 teaspoons baking powder

1/4 teaspoon salt

1 cup powdered sugar/ 120 grams


INSTRUCTIONS

1. Cream the butter & sugar until light & fluffy

2. Add lemon zest and vanilla

3. Mix eggs and lemon juice to prevent curdling when mixed in with the dairy

4  Add in eggs and lemon juice mixture and combine fully.

5. Sift flour, baking powder & salt together

6. Add the dry ingredients to the mixer on a medium speed until fully combined

7. Wrap the dough in saran wrap and refrigerate for two hours or preferably overnight.

8. When ready to bake preheat the oven to 350 C

9. Scoop and drop a tablespoon amount into powdered sugar and place into cookie sheet

10. Bake for 9-11 minutes

11. Do not brown the cookies, they will be soft and harden when cooled.
