Healthy Muffin (Stevia Sweetened)

I am gradually transitioning to more healthful eating since I'm in my mid 30's already and roughly this age, our body's metabolism is slowing down. I'm also concerned about my mental health after being diagnosed with PTSD and Somatic Symptom Disorder. I have constantly been on the lookout for healthy recipes because I read and proven that healthy eating is fundamental for various hormones that are responsible for mental health.
In addition to that, as I welcome this ageing process, it's also a personal preference to stay a healthier lifestyle so I can keep up with my children when they mature. I want to catch a glimpse of them and sustain more things without any health problems even when I am aged. (how amazing is that?)
This recipe was emailed to me by my nutritionist which is I think is also a Keto-friendly recipe to gratify your cravings without feeling guilty because of refined sugar use. But this recipe is initially a blueberry muffin but I modified it to pureed strawberry and Stevia Sweetened chocolate chips.



Ingredients

2 cups Almond flour
2 eggs
1/4 cup stevia
1/2 tsp baking soda 
1 tbsp apple cider vinegar 
1 tsp vanilla extract 
2 tbsp coconut oil or alternative 
1 cup blueberries or 1 cup pureed frozen strawberries (thawed)

Instruction
Preheat the oven to 350F
Bake the almond muffin at 350 for about 25-45 minutes or until the top is bouncy or when inserted with a toothpick nothing comes out.
